Per questa ricetta devo ringraziare il mio collega Davide che mi ha procurato il mosto fresco .

Mosto cotto d’uva -Grape Molasses



Mosto cotto d’ uva
                        Per  ½  litro di mosto cotto

1 ½ l.  mosto fresco di uva nera
2-3 cucchiai zucchero ( facoltativo )

 Procuratevi del mosto non ancora fermentato .
Versate il mosto fresco in una pentola capiente.
Lo si mette sul fuoco a bollire lentamente e schiumandolo ogni tanto .
Cuocere il mosto fresco finché risulta ristretto di un terzo del suo volume iniziale, ( circa 1 ora e mezza per me ) o  avrà la consistenza dello sciroppo.
Se volete potete aggiungere quasi alla fine qualche cucchiaio di zucchero a piacere .
Spegnete il fuoco e  lasciate raffreddare nella pentola . Filtrate e mettetelo in un barattolo a chiusura ermetica , oppure imbottigliatelo . Conservare al fresco e al riparo dalla luce.
Potete usare il mosto cotto con i formaggi ,per fare i biscotti , aggiungere all’ impasto del pane e sul gelato .

Grape Molasses

                         For ½ a liter of cooked grape must
  must 
1 ½ l. fresh black grapes juice
2-3 tablespoons sugar (optional)

Look for freshly pressed, unfermented grape juice,  without skins and pips.
Pour the fresh grape  juice into a big pot.
 Put it on the fire to boil slowly and skim off any froth that rises.
Cook until the fresh juice is restricted to one third of its original volume (about 1 hour and a half for me) or until will have the consistency of syrup.
If you want, you can add almost at the end,  a few tablespoons of sugar to taste.
Turn off the heat and let cool in the pot. Strain and store in a tightly closed jar or  bottle .
Keep in a  in cool and dark place.
You can use grape syrup with cheese, to make  cookies, to add a bread dough  and drizzled over ice cream.
